Ok, I lost back most of what the weekend cost me. In two days. So, we've proven that commitment and success are overlapping ideas, mutually inclusive of each other.
If you're unfamiliar with the Curves workout it's 30 seconds of cardio and 30 seconds on a strength machine arranged in a circle. You do the circle twice, which takes about 30 minutes and then stretch. Well, last night during the cardio sections the young lady (I think she's older than me) gave us alternative moves to do rather than running/walking in place. It's hard to walk today. It's a good hurt, I look forward to doing it again. Does sports cream really work? I may have to invest.
I feel it this time, a different kind of commitment, one that has totally come from God as He grants the desires of my heart as promised in His word.
Like I said in my post earlier this week, the office brought in Chick-fil-a biscuits and such this morning. It took a lot of strength to sit in my office while everyone else indulged in those Heaven-inspired, warm, tender, delicous biscuits. Wearing pants today that I've not been able to button the last few months made it easier. Reminding myself that rewarding success with food indulgences is liken to a canine also made it easier. Standing at the Kuerig only a couple feet away from the leftovers waiting what seemed like forever for my coffee to brew was a little harder. Seriously, how long does coffee take!?
Seems I'm sharing a lot of recipes lately, but this one is probably my favorite so far. I've adjusted the quantities for four servings.
Chicken Pasta Salad (to be served cold)
16 oz. cooked chicken, shredded
4 oz. grape tomatoes
4 oz. yellow tomatoes
4 oz. feta cheese
20 olives
1/3 cup pine nuts
1 cup finely chopped red onion
2 lemons
4-8 tbsp basil
8 tbsp hummus
4 tsp olive oil
Cook chicken however you'd like. I baked mine, but anyway would be fine. I cut my tomatoes in 1/2 to let the dressing soak into the insides. I omitted the olives because I don't like them. The one serving recipe calls for 2 tbsp basil. That's a lot, I just eyeballed it, it was probably a 1/4 to 1/3 cup. If you use fresh basil, you would use less, by about 1/2. Use the zest and juice of two lemons for fresh, crisp flavor. Use any hummus you like. You could also substitue cooked shrimp for the chicken. This is a great work-day lunch.
I've got to come up with a catchy sign-off phrase. Today I'll steal one from a movie I hate. Yes. I hate it. Why? Because it's stupid. I. love. lamp.
