BBQ Chicken w/coleslaw

Here's another one I have really enjoyed. This girl loves BBQ.  No, really, you don't understand.  I ate BBQ is some form or fashion five or six times last week.  All within the confines of the diet.  Some was Bunyan's, some was Big Bob's, the rest, I made myself from this recipe. Again, I don't follow recipes all the well.  I'll always share my revisions.  The below is for one serving.  Matt and I ate off of this 3 or 4 times each. BBQ Chicken w/ Coleslaw and Broccoli 6oz chicken breast 3 tbsp(s) sauce - barbecue ( if it's not Sweet Baby Ray's, it's not worth eating ) 2.6 oz broccoli - fresh 1 oz cabbage - shredded 1/4 carrots - large 1 1/2 tbsp(s) mayo (fat free) ( again, fat free = crap, I use Duke's because it's the only one w/o sugar ) 1/2 tsp(s) vinegar - cider ( in retrospect, white vinegar would have been better ) salt and pepper Did you know they make pre-shredded cabbage with carrots just for cole

Chicken Enchiladas

I'm really bad to "tweak" recipes.  I also don't like to measure.  God gave me eyeballs for measuring! So, I'll post the real recipe with my modifications in blue. And my instructions below.  When I printed the recipe from the website it only had the ingredients.  No problem for this experienced cook, I just made up the instructions.  Went back later and found the instructions, they were a little different, mine's better. The below is for 1 serving which is 2 enchiladas.  I made 10 enchiladas (dinner for 2 nights).  Matt can have 3 because he's a dude (glass ceilings and all).  So, technically you would do each amount x5.  I didn't do that for every item, would have been too much of some things. Chicken enchiladas with tomatillo salsa. 4 oz. chicken 1/4 diced onion 1/2 oz. spincach leaves ( I used frozen ) 2 corn tortillas ( I used whole wheat ) 1/4 c. tomatillo salsa ( I used chile verde - no idea if it's the same thing ) 2 oz. mozare

Week 1

So, I had my first weigh in yesterday...like all oversize people, I'd like to lose 50 lbs. and 25 inches by just blinking and wishing for it to happen.  I want to be fit and healthy, can't that just happen?  I'm enjoying the diet.  There are some great recipes.  Last night was chicken enchiladas, so yummy.  I feel like I'm eating all the time, but I know that it's good food that my body needs.   I like water, just fine.  Somedays it would take me an entire day to drink a 20oz. bottle of water, so drinking 64 oz. a day is an adjustment.  Mio is awesome.  Find a flavor you like and you'll have no trouble gulping down the fluids. Easter is this weekend and there will be temptations.  The success of my first week will keep me motivated to stay on track.  Why mess with something if it's working? I kept you in suspense on purpose.  It brought me joy. Down 2.6 lbs. 6 inches in the first week.  Victory. And because it's Easter, I'd like to share one

Planning

I believe that planning will be a huge factor in the success or failure of this adventure.  Last night I spent quite a bit of time chopping, dividing, scooping, measuring, etc.  This will, however, make it easier to follow the plan.  If you eliminate the excuses, there's nothing left to do but succeed!  I do know that the people I work with are going to think I do nothing but eat all day.  The plan calls for 3 meals and 2 snacks throughout the day.  Believe it or not, this big girl skips a lot of meals.  I'm going to have to make myself eat - how ironic. Matt asked me over the weekend what my goal was.  It's a fair question and one I'd expect.  I sat and pondered for a minute realizing that when I sat down with my coach for the initial meeting, and even before that, I'd set no numerical goal. No number of pounds to go, BMI goal, inches shed, nothing.  The best answer I could give Matt was:  commitment.  My goal is commitment.  The plan is for six months.  I wa

the Beginning

This afternoon when I leave work I'll be headed to my local Curves to sign a six month contract for their Curves Complete progam.  This will be the first time I've committed to such a program.  Sure, I've bought diet pills, and exercise equipment, and the like, what big girl hasn't?  This, however, will be the first time I will go somewhere each week and be held accountable.  It's kind of scary. Having always struggled with my weight, I have little faith in the potential success of any program.  Since last July the Coats family has strived to "eat primal", cutting out all processed sugar, processed food, carbs, grains, legumes, etc.  That transition is going to make following the Curves diet easier, as it is a high protein, low carb, low sugar, change the way you think about food plan.  I'm thankful for that blessing.  Now, if I could just not eat bread.  It's amazing, I do not buy it for home, yet I always find it somewhere.  Again, accountabili
